A Holiday Side Dish Your Guests Will Love

The holidays are here, and with them come gatherings, celebrations, and tables filled with food. While we love indulging in traditional favorites, we also believe in bringing dishes that nourish our families and support our health during this busy season.

This Holiday Harvest Salad is the perfect addition to any Christmas or New Year’s table—packed with seasonal ingredients like roasted sweet potatoes, crisp apples, and jewel-toned pomegranate seeds. It's as festive as it is functional, providing the B vitamins, antioxidants, and healthy fats your nervous system needs to handle holiday stress and keep your energy steady. Whether you're hosting or bringing a dish to share, this salad is sure to be a crowd-pleaser.

Harvest Salad Recipe:

  • 5 oz. Spring greens mix

  • 1 medium sweet potato, peeled and cubed

  • 1 tbsp olive oil

  • Salt and pepper

  • 1 apple, thinly sliced

  • 1/3 cup pecans

  • 2 tbsp. roasted sunflower seeds

  • ¼ cup pomegranate seeds

  • 4oz. goat cheese, crumbled

Dressing:

  • 3 tbsp. olive oil

  • 2 tbsp apple cider vinegar

  • 1 tsp. Dijon mustard

  • Pink H. sea salt

  • Pepper

Instructions:

  1. Preheat oven to 400 degrees, toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread on baking sheet and roast 20-25 minutes, flip halfway, until golden. Let cool.

  2. In a large bowl, combine Spring mix. Top with roasted sweet potatoes, apple slices, pecans, sunflower seeds, pomegranate seeds, and crumbled goat cheese.

  3. In a separate bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, sea salt, and pepper until smooth.

  4. Drizzle the dressing over the salad right before serving and gently toss.
